Zea mays convar dentiformis

Very old green dent corn variety from the south of Mexico.

Oaxacan Green is a traditional corn variety that originated in the Oaxaca region of Mexico, where it was cultivated by the indigenous Zapotec community. Its kernels have a striking green color that can vary in different shades. The 15-25 cm long cobs can be eaten as vegetable corn when young. Traditionally, however, they are allowed to fully ripen, dried and then ground into corn flour. This green flour can then be made into tamales, tacos or bread.
